Teaching a friend to cook a simple dish

Teaching a friend to cook is a generous thing to do, and it can be great fun for both of you. Perhaps your friend has just moved out, wants to eat more at home, or has always been intimidated by the kitchen. Whatever the reason, an afternoon spent cooking together is a good way to build confidence. The secret is to keep things simple and patient, and to enjoy the company.

Choose a dish that is easy to make and difficult to ruin, such as a simple pasta, a soup or a tray of roasted vegetables. Talk through the steps before you begin, so your friend knows what to expect. Make sure everything you need is laid out on the worktop: ingredients, knives, pans and a chopping board. Starting well prepared is half the battle.

Show, then let them try

Show the first step, then hand over. People learn best by doing, so resist the urge to take the knife back. Explain why you do things, not just how, whether it is browning onions slowly or tasting as you go. Let your friend make small mistakes and correct them along the way. Gentle encouragement is worth far more than criticism.

Teach a few basic habits. Wash hands before you start, keep raw and cooked food apart, and clean as you go. Explain how to use a sharp knife safely, and remind your friend that pans and trays are hot. These small routines make cooking safer and less stressful, and they will serve your friend well in every kitchen they ever use.

Encourage your friend to trust their senses. Ask what they can smell, how the food looks and whether it needs more seasoning. Taste together and talk about it. A dish does not have to be perfect to be good, and learning to judge by taste is the most useful skill of all.

Finish by sitting down and eating what you have made together. Talk about what went well and what your friend might do differently next time. Offer to write down the steps in a few simple notes, and suggest a dish for them to try alone. A friend who has cooked with you once will often surprise you by cooking for you next time.
